Eggs Irish Benedict

There are a few stories about the origins of Eggs Benedict. One of them suggests, that in the 1860's Mrs. LeGrand Benedict, a regular at the restaurant, wanted something unique to eat and asked Chef Charles Ranhofer for some ideas. He offered to make her Eggs Benedict and published the recipe later in his cookbook in 1894. Coincidentally the same year, a banker named Lemuel Benedict ordered some buttered toast, crisp bacon, two poached eggs, and the hollandaise sauce at the Waldorf hotel. Their legendary chef was so impressed he added it to the menu and gave it Banker's name. Fried Chicken and Waffles are popping up on brunch menus everywhere! It is truly an American invention. It is part of a variety of culinary traditions. Food scholars have plenty of origin theories including Pennsylvania Dutch Cuisine and of course soul food, but "Chicken and Waffles is a Harlem thing". The iconic around-the-clock breakfast spots don't serve chicken and waffles(no fryers on-premises), the dish is indeed a southern invention.
