Spanish chorizo is a dry-cured pork sausage seasoned primarily with paprika (especially smoked paprika, or pimentón), which gives it its distinctive flavor and color. It’s different from Mexican chorizo, which is fresh and usually cooked before eating.

Chorizo Curado (Cured) – Ready to eat, sliced thin like salami.
Chorizo Fresco (Fresh) – Needs to be cooked before eating.
Chorizo Ibérico – Made from Iberian pigs, prized for its quality.
Chorizo de León / Chorizo Riojano – Regional varieties with unique spice blends and curing methods.
